Special Issue on Fermentation

Fermentation is a metabolic process that converts sugar to acids, gases, or alcohol. It occurs in yeast and bacteria, and also in oxygen-starved muscle cells, as in the case of lactic acid fermentation. Fermentation is also used more broadly to refer to the bulk growth of microorganisms on a growth medium, often with the goal of producing a specific chemical product.

In this special issue, we intend to invite front-line researchers and authors to submit original researches and review articles on exploring fermentation. Potential topics include, but are not limited to:

  • Ethanol fermentation
  • Lactic acid fermentation
  • Aerobic respiration
  • Hydrogen gas production in fermentation
  • Methane gas production in fermentation
  • Human use

Authors should read over the journal’s Authors’ Guidelines carefully before submission. Prospective authors should submit an electronic copy of their complete manuscript through the journal at Paper Submission System.

Please kindly specify the “Special Issue” under your manuscript title. The research field “Special Issue – Fermentation” should be selected during your submission.
