Abstract: Small and medium-sized enterprises (SMEs) push Taiwan economic, but the sparse resource is hard to achieve because of the competition from plenty of SMEs. To fulfill fast changing customer requirements, SMEs must consume resources as few as possible to produce goods as soon as possible, especially for SMEs of food processing. With large amount of various food products, in food processing industry, how to manage food products to reduce the inventory cost turns to be the key problem. The problem of food products could be classified with different importance. Restated, to solve food inventory problem, the importance of inventory-related characteristics of food products must be found at first: shipping date, importance, customer requirements, shipping confirmation, order handling, distribution quality, types and scrap. So, this study is to find the importance of inventory problems of food processing SMEs. This study uses expert opinion process (AHP) framework to survey administrators, inventory staff, and academic experts majoring in inventory management to identify the problems and further to reduce inventory cost.
