Special Issue on Antioxidant Research
An antioxidant is a molecule that inhibits the oxidation of other molecules. Oxidation is a chemical reaction that transfers electrons or hydrogen from a substance to an oxidizing agent. Oxidation reactions can produce free radicals. In turn, these radicals can start chain reactions. When the chain reaction occurs in a cell, it can cause damage or death to the cell. The goal of this special issue is to provide a platform for scientists and academicians all over the world to promote, share, and discuss various new issues and developments in the area of antioxidant research.
In this special issue, we are going to invite front-line researchers and authors to submit original research and review articles that explore antioxidant research. In this special issue, potential topics include, but are not limited to:
-
Oxidative challenge in biology
-
Tocopherols and tocotrienols
-
Pro-oxidant activities
-
Potential of antioxidant supplements
-
Superoxide dismutase
-
Oxidative stress in disease
-
Food preservatives
Authors should read over the journal’s Authors’ Guidelines carefully before submission. Prospective authors should submit an electronic copy of their complete manuscript through the journal’s Paper Submission System.
Please kindly specify the “Special Issue” under your manuscript title. The research field “Special Issue - Antioxidant Research” should be selected during your submission.
