    Special Issue on Food Preservation Research

     

    Food Preservation Research usually involves preventing the growth of bacteria, fungi, or any other micro-organisms, as well as retarding the oxidation of fats that cause rancidity. Many food processes designed will involve a number of food preservation methods to preserve food. Maintaining or creating nutritional value, texture and flavor is also an important aspect of food preservation. The goal of this special issue is to provide a platform for scientists and academicians all over the world to promote, share, and discuss various new issues of food preservation research.

     

    In this special issue, we intend to invite front-line researchers and authors to submit original researches and review articles on exploring food preservation research. Potential topics include, but are not limited to:

     

    • Drying and dehydration
    • Freezing
    • Food fermentation
    • Food processing
    • Packing
    • Shelf life
    • Influence of nutritional value and quality

     

    Authors should read over the journal’s Authors’ Guidelines carefully before submission. Prospective authors should submit an electronic copy of their complete manuscript through the journal at Paper Submission System.

     

    Please kindly notice that the “Special Issue” under your manuscript title is supposed to be specified and the research field “Special Issue – Food Preservation Research” should be chosen during your submission.
